Coconut Oatmeal No-bake Cookies

These Gluten Free, Dairy Free cookies are and amazing healthier variation on a traditional no-bake cookie. The are a great treat that is not overly sweet.

Ingredients

11.6 oz Coconut Condensed milk 

15.5 oz Coconut milk

1 cup Brewed Choffy 

1 cup Coconut oil

1/2 cup golden monk fruit

Directions

In a saucepan, bring to a rolling boil over medium heat. Boil for two minutes.

1 cup Choffy Grounds postbrew

14 oz sweetened coconut flakes

6 cups Rolled Oats

1/4 cup Cocoa Powder

1 T Vanilla extract 

Directions

Mix all together in a large bowl.

Mix all together in a large bowl.Pour the hot mixture over the cold mixture. Stir until well combined. Let it sit for 5 minutes. Stir for 1-2 minutes. Scoop onto parchment paper. Allow to set up 1-2 hours in the refrigerator before serving. Store in an airtight container in the refrigerator.

Make 45-60 cookies, depending on size.

DAIRY FREE CHOFFY PEANUT BUTTER NO-BAKE COOKIES 

These are great as drop cookies or an April Fool’s Day treat. Who says you can’t have fun with your food?

These are dairy-free and gluten-free.

Ingredients

1 1/2 Coconut Oil
3 cups Sugar
2 cups Brewed Choffy
2 cups Peanut Butter
12 cups Quick Oats
2 cup Peanut Butter Powder
1 cup Coco Powder
1 cup Brewed Choffy Grinds

Directions

In a large bowl combined oats, peanut butter powder, cocoa powder, and Choffy grinds.

In a stock pot, combined coconut oil, sugar, and Choffy. Bring to a boil and boil for 2 minutes. Turn off heat and stir in peanut butter.

Pour hot mixture over dry ingredients and combine completely.

Place scope onto parchment paper. Allow to set up for 30 minutes. Store in an airtight container.

April Fool’s Day Fun – after combining ingredients, place it into a Ziploc Bag. Cut the tip off and pipe it like Poop on to parchment paper. Allow to set up for 30 minutes. Once set up, place in paper bags and serve.

Over Night Wild Orange Coconut Chia Pudding

We enjoy this pudding for breakfast or a snack.

Ingredients

15 oz Can Coconut Milk
1/2 Cup Cocconut Milk
10-15 Drops doTerra Wild Orange Essential Oil
6 T Chia Seeds
6 T Shredded Coconut

Direction

In a glass, ceramic or metal bowl combined coconut milk and essential oil. Stir in chai seeds. Cover and place in the refrigerator over night. Divide into 2-4 serving and top with shredded coconut.
