My son needed something with good protein and healthy carbohydrates for breakfast. I also took them for his hockey team and they were a hit. These are also gluten free and can be a healthier dessert option.

5 cups Bananas 1 cup Butter softened 4 scoop Vanilla Protein Powder 1 cup Brown Sugar 1 cup Monk Fruit (You can omit the monk fruit and do an additional cup of brown Sugar) 2 tsp Salt 3 tsp Baking Power 2 cups Oat Flour 7-9 cups Oats 24 oz Chocolate Chips

Preheat oven to 350 degrees.
In a large bowl mash the bananas.
Mix in butter, sugar, monk fruit, and butter until smooth.
Stir in oat flour, salt, and baking powder.
Mix in 5 cups of oats and then add in one cup at a time. Mixture should be thick but not dry like cookie dough.
Lightly grease a quarter sheet pan. Spread evenly over pan. Bake for 25-40 minutes until toothpick comes out clean.

Combined egg whites, water, and apple sauce. In a Mixing bowl combined oat flour, whey protein, baking powder, and salt. Stir Blueberries into the dry ingredients.
Fold wet ingredients into dry ingredients. Divide into the 12 liners. Bake for 20-25 minutes.

Preheat oven to 375 degrees. And line muffin tins with liners. Make Oat flour by grinding oats in blender approximately 1 1/2 cup to make 1 cup.
Smash bananas. Make whipped Choffy by blending 3/4 cup Choffy grinds with 1/4 cup brewed Choffy until it is the texture of mousse. Add in to the blender Honey, Coconut Oil, and blend until smooth.
Mix in bananas. Stir in the remaining ingredients.
Bake for 30-35 minutes. Remove from pan and let cool for at least 10 minutes before serving. These also freeze well.

Preheat oven to 375.
Beat eggs until they are thick and lemony. Add sugars and oil. Beat well; a zucchini and vanilla. Mix in dry ingredients. Fold in chocolate chips. Pour into greased loaf pans or Bundt pan.
Bake for 50 to 60 minutes. Cool in pan for 10-15 minutes before removing.
Serve warm or cold. If desired, drizzle with melted chocolate or frost with cream cheese frosting.

Beat together eggs, milk, and vanilla. Heat a lightly oiled griddle or skillet over medium-high heat. Dunk each slice of bread in egg mixture, soaking both sides. Place onn pan, and cook on both sides until golden. Top with cannoli cream, then berries, whipping cream and then drizzle with chocolate gnocchi.
