Low Carb Cheese Cake

Low Carb Cheesecake

I enjoy good food and cheesecake has always been my one of my favorite desserts. I am also diabetic so I like to create recipes that don’t raise my glucose levels. This recipe was enjoyed by everyone in our family.

Crust Ingredients

1/2 cup Softened Unsalted Butter
1/4 cup Coconut Flour
1/2 cup Almond Flour

Crust Directions

Pre-heat oven to 400 degrees. Combined ingredients until crumbly. Press into the bottom of a greased Spring Form Pan. Bake for 8 minutes.

Almond Coconut Crust

Cream Ingredients

1 T Vanilla
2 T Coconut Sugar
21 oz Cream Cheese
16 oz Mascarpone Cheese
4 Eggs

Cream Directions

In a mixture, dissolve coconut sugar in vanilla. Add 8 oz of cream cheese to the sugar mixture at a time and cream until smooth. Add in mascarpone cheese and cream until smooth. Add one egg at a time until smooth. Bake for 15 minutes at 400 degrees. Reduce heat to 300 degrees and bake for 40 minutes at 300 degrees. Allow to complete cool. Refrigerate for 2 or more hours before serving.

We served it with melted dark chocolate and whipping cream.

Ham and Herb Cheese Ball

Ham and Herb Cheese Ball

I love a good cheese ball for an appetizer. This is one of my favorites, but I think it’s because it is my own creation. 😉 Serve with your favorite cracker or as a spread on your favorite meat sandwich.

Ingredients

8 oz Mascarpone Cheese
8 oz Cream Cheese
1 -2 tooth picks of doTerra Dill Essential Oil
1-2 tooth picks of doTerra Basil Essential Oil
pinch of Salt
1/2 tsp Minced Garlic
2 tsp Chopped Green Onion
4 Slices Deli Ham Chopped (I love using Black Forest)

Directions

Mix mascarpone cheese and cream cheese until smooth. Add  essential oil and salt. Fold in remaining ingredients. Form into a ball and cover with plastic wrap. Refrigerate for 12 – 24 hours before serving.

Chocolate Orange Cheese Ball

Chocolate Orange Cheese Ball

This is a fun party snack. We like to eat it with vanilla wafers, graham crackers, and ginger snaps.

Ingredients

8 oz Mascarpone Cheese
8 oz Cream Cheese
1 T Honey
20-25 drops doTerra Wild Orange Essential Oil
6 oz Mini Chocolate Chips

Directions

Mix mascarpone cheese, cream cheese, and honey until smooth. Add in wild orange essential oil. Fold in chocolate chips. Form into a ball and cover with plastic wrap. Refrigerate for 12 – 24 hours before serving.

Wrapping into a ball.

Lemon Bars

Cream Cheese Lemon Bar

I have friends who are have different Gluten allergies so I created these treats to share for with them. I sometimes double the cream cheese layer so it is more like lemon cheese cake. When doing so add 5 to 10 minutes to the baking time.

Ingredients

Crust
3/4 cup Unsalted Butter softened
1/2 cup Pure Cane Sugar
1 cup Almond Flour
1 cup Coconut Flour

Cream Cheese Layer
8 oz Cream Cheese
1/2 cup Pure Cane Sugar
2 Eggs

Lemon Layer
1 1/2 cups Pure Cane Sugar
2 T Corn Starch
1/2 Lemon Juice
40 drops doTerra Lemon Essential Oil

Directions

Pre-heat oven to 350 degrees.

Crust
Cut together butter, sugar, almond flour, and coconut flour until crumbly. Press into a 9 x 13 pan. Bake for 10 minutes.

Cream Cheese Layer
Mix together cream cheese, sugar and eggs. Pour over crust.

Lemon Layer
In a metal, ceramic, or glass bowl combined all remaining ingredients and pour gently over cream cheese layer. Bake for 30 – 35 minutes until toothpick comes out clean. Allow to cool for 15 minutes. Refrigerate for at least 2 hours before cutting and serving.

Cream Cheese Strudel Muffins

I love all things with cream cheese. I also love strudel muffins. So I decided to play around. We added fresh peaches to 1/2 of the batch which was my daughters favorite.

Ingredients

Muffin
1 Egg
1 cup Milk
1/4 cup Oil
1/4 cup Sugar
2 cups Flour
3 tsp Baking Powder
1 tsp Salt
Optional 1/4 – 1/2 cup fresh fruit

Cream Cheese Filling
1 Egg
1/4 cup Sugar
8 oz Cream Cheese

Strudel
1/4 cup Unsalted Butter
1/4 cup Brown Sugar
1/2 cup Flour

Directions

Pre-heat oven to 400 degrees.

In a medium mixing bowl cream together egg, milk, oil, and sugar. Shift in dry muffin ingredients. Gently fold dry and wet ingredients together (including optional fruit).

In a separate bowl cream together filling ingredient until smooth.

In a third bowl cream together butter and brown sugar. Stir in flour until crumbly.

Line a 12 count muffin tin with liners. Layer each cup with a thin layer of dough followed by cream cheese filling, more dough, then sprinkle with strudel.

Bake for 18-22 minutes until golden brown.

 

 

Cheese-ball Roll-up Sandwiches

My mom made roll-up sandwiches for picnics and road trips when I was growing up. Sometimes it was chicken with cream cheese other times it was lunch meat with cream cheese roll-up, but it was always with homemade roll dough. As we got other and life was busier she started using crescent rolls to save time. I also made these for my kids, but I wanted to take it up a notch in flavor by adding additional ingredients. The cheese-ball mix is great with crackers as well as in these sandwiches! This recipe can me made in large batches and be put together as a team in assembly line fashion. We often work on these as a family.

Ingredients

Cheese-ball Mix
1-8oz package Cream Cheese
1/3 cup Shredded Cheese
2 T Dried Onion Flakes
1 tsp Garlic
1 toothpick dip doTerra Basil*
1 toothpick dip doTerra Thyme*
1 toothpick dip doTerra Rosemary*
(optional) 2 T Bacon Bits

2-8ct Tube of Crescent Rolls
1 lb Lunch meat slices (Ham, Chicken, Turkey, Roast Beef)

Directions

Pre-heat oven to 375.

Stack 3-4 pieces of lunch meat.

Spread 2-3 T of Cheese-ball mix on to the meat.

Roll the meat.

Roll Crescent dough around the meat roll. And repeat until all 16 are complete.

Bake for 12-15 minutes until golden brown.

Store in the refrigerator if not eating immediately.

 

*Toothpick method

1 toothpick dip =  dip a toothpick into the essential oil and dip it once into the recipe
1 toothpick swirl = dip a toothpick into the essential oil and swirl it around in the recipe
1/2 drop – Drop an essential oil onto a spoon, then use the tip of a sharp knife to obtain the desired flavor
