Frozen Berry Salad

Ingredients

8 oz Cream Cheese
2 cups Heavy Whipping Cream
1/4 cups Powdered Sugar
2 lbs Frozen Mixed Berries

Directions

In a mixer whip cream cheese until smooth. Add in whipping cream and powdered sugar. Whip until stiff peaks. Fold in Frozen Berries. Can be served as a dessert immediately or refrigerated for 5-6 hours to be served as a side dish.

Loaded Baked Potato Salad

Loaded Baked Potato Salad

Who doesn’t enjoy a loaded baked potato? In the summer it is just way to hot to eat them. Joseph does not like traditional potato salad, so we came up with this recipe.

Ingredients

5 cups Red Potatoes cubbed
1/2 cup Olive Oil
1 cup Sour Cream
1/2 cup Mayonnaise
3 Green Onions Diced
1 clove Garlic Minced
1 cup Shredded Cheese
1/2 cup Bacon Crumbles

Loaded Baked Potato Salad Steps

Directions

Dice potatoes and steam them for 5 minutes. Preheat large skillet. Add olive oil and potatoes and fry the until golden brown. Remove from heat and place in the refrigerator to cool for 30 minutes. In a separate  bowl combined remaining ingredients to make the sauce. Stir sauce over cooled potatoes and server.

Broccoli Cauliflower Salad

I learned this recipe from my mother-in-law. I have to admit I have increase the amount of cheese and bacon from her recipe. Who doesn’t love cheese and bacon? This is a family favorite that we enjoy year round. It can me doubled or tripled easily for a large gathering. It can easily prepare a head of time since you stir in the dressing right before serving. I do have to admit it is only good for the first 24 hours of having the dressing, but at our house there is rarely left overs.

Ingredients

2-3 cups Broccoli
1-2 cups Cauliflower
1 cup Cheddar Cheese
1/2 – 1 cup Bacon Bits
1 cup Mayonnaise
1/2 cup Whipping Cream or Milk
2 T Lemon Juice
2 T Sugar
2 T Mustard

Directions

Cut broccoli and cauliflower into bite size pieces. Add cheese and bacon bits. Stir together mayonnaise, whipping cream, lemon juice, sugar, and mustard to make dressing. Stir on dressing right before severing.
