Ginger Beef and Broccoli (Gluten Free)

Our family loves adding our favorite flavors together to improve traditional recipes. This was a big hit and as an added bonus it is gluten-free.

Ingredients

2 T Olive Oil
2 T Minced Ginger
1 T Minced Garlic
1 Cup Diced Onions

Directions

Sautee ingredients in a wok or large skillet.


Ingredients

1 T Sugar
1 tsp Salt
3 T Cornstarch
3 Cups Water

Directions

Mix together dry ingredients. Add in water and mix well.

Add to wok .

Ingredients

3-4 Cups Bitesize Broccoli
3-4 Cups Bitesize Prepared TriTip or Steak

Directions

Add broccoli and tritip to wok and simmer for 5 minutes until broccoli is cooked.


Thai Chicken & Broccoli in a Peanut Sauce

I love Thai Food with the spices and peanuts. I started playing around with different Thai Peanut Sauces, but didn’t find exactly was I was looking for. After playing around I came up with one I really enjoy. You can increase the spicy level by adding more chili flakes and chili oil. My basic recipe is mild. Serve over rice or noodles. This recipe doubles and triples very nicely.

Ingredients:

2 Chicken Breasts
2 T Peanut Oil
1 1/2 cups Smooth Peanut Butter
1/2 cup Soy Sauce
1 1/2 cup Water
1 T Chili Flakes
1 T Chili Oil
2-3 cup Broccoli
1/2 cup Dry Roasted Peanuts

Directions:

Cut Chicken Breasts into bit size pieces. Brown in wok with Peanut Oil.

Cut Broccoli into bit size pieces.

Add in Peanut Butter, Soy Sauce, Water, Chili Flakes, and Chili Oil, Stir until it creates a smooth sauce.

Stir in Broccoli and Peanuts and cook for 3-5 minutes.

Serve over noodles or rice.

 

Broccoli Cauliflower Salad

I learned this recipe from my mother-in-law. I have to admit I have increase the amount of cheese and bacon from her recipe. Who doesn’t love cheese and bacon? This is a family favorite that we enjoy year round. It can me doubled or tripled easily for a large gathering. It can easily prepare a head of time since you stir in the dressing right before serving. I do have to admit it is only good for the first 24 hours of having the dressing, but at our house there is rarely left overs.

Ingredients

2-3 cups Broccoli
1-2 cups Cauliflower
1 cup Cheddar Cheese
1/2 – 1 cup Bacon Bits
1 cup Mayonnaise
1/2 cup Whipping Cream or Milk
2 T Lemon Juice
2 T Sugar
2 T Mustard

Directions

Cut broccoli and cauliflower into bite size pieces. Add cheese and bacon bits. Stir together mayonnaise, whipping cream, lemon juice, sugar, and mustard to make dressing. Stir on dressing right before severing.
